In a 2 cup glass measuring cup, whisk almond butter, honey and vanilla extract. Line baking sheet with parchment paper or a baking mat. Spread the mixture into an even layer on a baking sheet (see note).

Makes approximately 3.5 cups of granola. Preheat oven to 325 degrees f. Stir in the oil, honey and vanilla.

You want the honey to get nice and loose. We’ve made so many batches of this honey almond granola recipe we basically have it down to a science. The recipe includes a good bit of honey, which gives it an awesome flavor and sticky/chewy texture.
