Instant Pot Caramelized Onion Mashed Potatoes Recipe

Potato and onion recipe instant pot. We got inspired by a dill pickle soup and added a twist of finely diced gherkins and fresh dill right at the end. The sliced potatoes are quickly pressure cooked, then layered with a creamy cheese sauce and broiled to gooey perfection.

Use a masher to mash the potatoes right there in the instant pot. Plus, the potatoes will absorb the water making them extremely tender and easily mashable. Switch on the instant pot and press the saute button.

Set the instant pot to sealing, pressure cook for 10 minutes on high pressure.; Remember to add a cup of water with your potatoes in the instant pot. Saute for 3 minutes (photo 2).

If you're craving scalloped potatoes, they can be enjoyed in just over 30 minutes using the instant pot. I just chopped the tomatoes, but you can also puree them to get a smoother gravy. Add potatoes to an instant pot or electric pressure cooker.

I also added a link to my recipe to prepare sambar powder that will come in handy on busy days. They’re also delicious tossed in mixed greens or turned into hot potato salad with choice of dressing. You don’t need butter and cream when you pack the recipe full of flavor. You need it to get the instant pot to pressurize. This mashed potato recipe is easy and delicious!
