Udon Noodle Soup Recipe Tofu

Add the grated ginger, white miso paste, sugar and mirin. Originating from osaka in japan, this comforting vegetarian dish gets its name from a common yokai (magical creature) in japanese folktales—a kitsune (fox) whose favorite food is inari age.

For this version, simply follow the recipe as is but top each bowl of soup with a slice of fried tofu.

Stir through some miso paste, or extra soy sauce. Bring to a boil, reduce heat, and simmer for 15 minutes, stirring occasionally. As soon as it boils, take the kombu out.

Sprinkle each serving with 2 tablespoons green onions and 1 tablespoon cilantro. 1 ½ cups chopped cucumber. Cook serrano pepper and ginger until softened, 2 to 3 minutes.

Add in 3 tablespoons of soy sauce and 1/2 block of tofu, cubed, to the pot and continue to stir fry until combined and fragrant. Kitsune udon, which translates to “fox udon,” is a japanese noodle soup featuring udon noodles and inari age (seasoned fried tofu) floating in a dashi broth. Thinly sliced spring onion and daikon;

Turn off the heat and discard the ginger. Turn the heat on and bring the broth to a boil. Top with cilantro and more chili oil if desired.

Stir in the spinach, then the tofu.
